Post-summer, we’re all looking to get back on track with our health goals. For some of us, that means hitting up the gym a couple of times per week or trying to go vegetarian Monday through Friday. I have a hard time feeling full just on leaves (aka salads!) alone, so that’s when I turn to heartier vegetables like the eggplant to keep me feeling satisfied throughout the day.
